We are looking for experienced full-time and part-time pastry chefs to join the Scéal Bakery team at our new location in Greystones. Our new pastry chefs will have lots of enthusiasm to learn and grow within the company. The ideal candidates will have some experience working in a busy bakery setting. They will be driven and passionate about baking and eating delicious, seasonal food.
Pastry Chef will:
• Report to the Executive Pastry Chef
• Be responsible all daily prep. This this will include but is not limited to: mixing doughs, managing fermentation,
pastry production, lamination, shaping, proofing, baking, and garnishing
• Make fillings for pastries, such as pastry creams, jams, ganaches, and curds
• Make cookies, cakes, choux, tarts and biscuits
• Ensure compliance with HACCP regulations
• Ensure cleanliness standards are upheld at all times
• Follow safety procedures when handling heavy items
Applicant Requirements
• Experience working with laminated and enriched doughs
• Experience working in a professional kitchen environment
• An understanding of fermentation
• Competent in Excel, bakers percentages and formulas
• Work cleanly and efficiently
• Ability to work in a fast paced environment
• Capable of problem solving and having a keen eye for detail
• Ability to work as a team player
• Effective communication skills
• Be driven and constantly wanting to improve and learn new skills
• To be a positive ambassador for our brand and values
• Happy to work in an open kitchen
• A strong understanding of HACCP regulations
• Desirable - 6 months experience working in a professional bakery environment
